Entertaining family and friends is one of life’s great pleasures. And because most gatherings unfold around the dining table, few things are more important than creating a setting that feels thoughtful, welcoming and beautiful, whatever the occasion. From festive lunches and birthday celebrations to lavish dinner parties or an intimate candlelit tête-à-tête, the possibilities are endless. The key lies in careful preparation and attention to detail.

Start with the foundations

Crockery and cutlery form the backbone of any table. Rather than investing in multiple sets to suit different moods, it’s wise to choose timeless, neutral pieces at the outset. My personal preference is for plain white crockery, which offers endless versatility.

After many years of trotting out my vast collection of traditional King’s pattern silverware, I opted for sleek stainless-steel cutlery for a more contemporary feel, though I still bring out the silver for especially formal occasions. Neutral foundations allow for creativity elsewhere: colourful serving dishes, textured placemats, distinctive wine glasses or statement linens can completely transform the look of a table.

For those fortunate enough to own a collection of richly coloured dishes, mixing pieces can create an eclectic, celebratory aesthetic full of character.

The essentials of place setting

The dinner table is a special place that fosters togetherness and creates lasting memories. It is where daily conversations unfold, celebrations are marked and guests are welcomed. Whether sitting down to a simple family meal or hosting an elegant dinner party, following the proper table settings for each occasion is an opportunity to demonstrate thoughtful hospitality.

Most of us know very well how to set a formal table correctly but, just in case there is any doubt, I will run through the basics. Cutlery settings should be adapted to the courses being served and the order in which they appear, as correct placement remains important for formal occasions:

Bread plate and butter knife: above and to the left of the dinner plate

Salad/appetiser fork: left side, outermost

Dinner fork: left side, inside

Dinner knife: right side, inside

Soup spoon: right side, outermost

Dessert spoon and fork: placed horizontally above the plate

Water glass: above the dinner knife

Wine glasses: above and to the right, forming a triangle

Underplate: centred, with napkin placed on top

As a rule, cutlery is used from the outside in as courses progress.

Atmosphere matters

Candles and flowers belong at the centre of the table, but with restraint. Unscented candles are preferable – the aroma should be that of the food alone. Short-stemmed flowers work best, so guests aren’t having to duck and weave to speak to people across the table. Flowers should be arranged loosely for an abundant yet unfussy feel, while leaving space for serving dishes. For more formal occasions, place cards add elegance and are also congenial to conversation.

As for linens, preferences vary. I often favour bare polished wood with placemats, but tablecloths and runners can add warmth and festivity, particularly for special occasions.

Al fresco elegance

Outdoor dining invites colour and informality. It is ideal for casual gatherings with floral or citrus-printed linens, rustic wooden boards laden with cheeses, cold meats, fruit and sourdough bread, vibrant glassware and crockery, and candles glowing inside glass jars. Summer entertaining is an opportunity to embrace abundance and ease – the sky is the limit.

The secret ingredient

The true art of hosting lies in preparation. Set the table the evening before and prepare and cook as much as possible in advance. Make lists and draw up a schedule to ensure everything runs smoothly.

Allow time to dress to impress and be ready to welcome your guests. Then, as everyone enjoys their food and sips their wine while the candles flicker, sit back, relax and soak up the atmosphere – and the compliments.
